Rempeyek biasa dibuat untuk melengkapi sajian menu utama, biasanya digunakan sebagai pengganti kerupuk. Karena beberapa orang termasuk saya jika makan tanpa kerupuk rasanya ada yang kurang. Rempeyek juga sering dimakan sebagai cemilan karena rasanya yang renyah dan gurih…apalagi yang menyukai kacang pasti tambah tertarik untuk mengkonsumsi rempeyek ini.

Bahan Rempeyek
- 400 gr tepung beras
- 1/2 sdm tepung tapioka
- 1/2 kg kacang tanah, dikupas, boleh dibelah dua (tergantung selera)
- 4 siung bawang putih
- 4 butir kemiri
- 1 sdt ketumbar bubuk
- 250 cc santan kelapa
- 100 cc air
- 1 butir telur
- 1 sdm air kapur sirih, jika ada
- 5 lembar daun jeruk, diiris tipis-tipis
- Minyak goreng secukupnya
- Garam secukupnya

Cara Membuat Rempeyek
- Masukkan telur, bawang putih, kemiri, ketumbar bubuk, garam, dan air kapur sirih ke dalam wadah, kemudian diulek/diblender sampai halus.
- Campurkan bumbu halus tersebut dengan air, santan, tepung beras, tapioka, kacang tanah, dan daun jeruk. Kemudian aduk sampai merata.
- Panaskan minyak goreng pada kuali/wajan penggorengan. Setelah minyak panas, masukkan adonan yang telah dibuat dengan sendok sedikit demi sedikit ke dalam minyak panas di bagian pinggir kuali/wajan penggorengan.
- Goreng dengan api sedang sampai peyek berwarna kuning kecoklatan, lalu angkat dan tiriskan. Peyek gurih dan renyak siap disajikan.
